The Chef's Recipes: Rabbit stuffed with asparagus and bacon, sauce with Colfiorito lentils

A dish full of flavor and nutrients

Ingredients for 8-10 people

1 whole rabbit
Fresh asparagus blanched earlier
10 thin slices of bacon
500 gr. Lentil Colfiorito
Extra virgin olive oil
Salt and pepper
4 cloves garlic

Bone the rabbit very well taking care not to pierce the side of the back.
Separately in a pan put 2 cloves of garlic, a sprig of rosemary, asparagus previously blanched and then cut in small pieces, sautee  then season with salt and pepper and set aside a few minutes.

Now add the rabbit already salted, then add pepper, slices of bacon and only after settling the asparagus sauteed. Wrap it all up and tie with kitchen twine and then put it in a baking dish seasoned with sage, rosemary and garlic and bake at 200c ° for about 45 minutes basting occasionally with white wine and turn.

Now take the previously boiled lentils and toss with garlic, then season with white wine, add salt and cook, adding water for about 10 minutes over high heat.

10 minutes later make a puree with the lentils with an immersion blender, then serve laying the lentils cream on the dish then add a portion of the rabbit cut into small logs. Decorate with fresh herbs.
